What raw honey really is

1 min read

Raw honey is honey exactly as it left the hive — strained only to remove wax, never heated, never finely filtered. Heat and heavy filtering make honey look uniform on a shelf, but they flatten the very enzymes, aromas and fine particles that give each harvest its character.

One of the most common questions we hear is about crystallisation. When raw honey thickens or sugars over time, that is a natural sign of unprocessed honey — glucose bonding into crystals. Gentle warmth in a water bath returns it to liquid without harming anything.

Key points

  • Raw and unfiltered: nothing added, nothing heated away.
  • Crystallisation is natural, not a fault.
  • Keep the jar sealed at room temperature, out of sunlight.
